Beef with Black Bean and Baby Spinach




Ingredients:

- 1 lb beef
- 1.5 tsp sugar
- 1 tsp oyster sauce
- 1 tsp hoisin sauce
- 1 tsp black bean sauce
- 1 tsp red chili sauce
- 1 lb baby spinach
- shallot and garlic
- 2 tbsp olive oil

Methods:
- Cut beef into small strips
- Marinate beef with all the ingredients + 1 tbsp olive oil for 1 hour or overnight
- Chop shallot and garlic
- Heat the pan then put 1 tbsp olive oil in.
- When oil is hot, put shallot and garlic in.
- When shallot and garlic turn brown, put marinated beef in.
- Stir fry for about 10 mins then put baby spinach in.
- Stir fry for another 3 min, then turn off heat.
- Serve beef with white rice.

Tom Rim Man - Shrimp Stir-fry



Ingredients:
- 2 lbs shrimp
- 3 tsp sugar
- 1 tsp salt (or 1/2 tsp salt + 1 tsp chicken bouillon)
- 1/2 tsp pepper
- 2 tbsp olive oil
- 1 glove of garlic
- some green onions

Methods:
- Rinse the shrimp and pat dry them.
- Marinate the shrimp with sugar, salt and pepper for about 30 mins.
- Chop garlic and green onions (put them separately).
- Heat the pan then put 2 tbsp olive oil.
- When the oil is hot, put the garlic in.
- When the garlic turns brown, put the shrimp in and stir-fry for 10-15 mins or until the shrimp is done.
- throw in the chopped green onions and stir-fry for another minute then turn off the heat.
- Serve this dish hot with rice.

Thit Nhoi Ca Chua - Stuffed Meat Tomatoes



Ingredients:
- 2 lbs of ground pork
- 4 large round tomatoes
- 3 tsp sugar
- 1 tsp salt (1/2 tsp salt + 1 tsp chicken bouillon)
- 2 tbsp soy sauce
- 2 tbsp oyster sauce
- some green onions
- 2 small shallot
- some cilantro
- olive oil


Method:
- chop green onions, shallots and cilantro. Then set aside
- put all the ingredients and ground pork in a large bow. Then smooth the meat out with the large spoon.
- Mix the meat with chopped onions, shallots and cilantro.
- Pick up a handful of meat and throw them down to make the texture more compact and chewy. Do it about 3-4 times each.
- Cut the tomatoes in half lengthwise.
- Scoop the seeds out and stuff the meat in.
- Pour a few tbsp of olive oil on the pan and put the stuffed meat in (meat side will be down).
- Use very low heat to cook the meat (15 mins) and cover the pan
- Flip the meat side up and cook for another 5 mins.
- Serve the stuffed meat tomatoes with rice and lettuce.

With the same ingredients and methods, you can also make meat in patties and fry them. Then make tomato sauce and pour it over the meat. My husband loves this way better then stuffed meat tomatoes.

Bo Xao Cu Kieu - Beef stir-fry with pickle leeks



Ingredients:
- 1 lb of thinned slice beef
- 1 red bell pepper
- 1 big cucumber
- 2 oz pickled leeks
- 2 tbsp pickled juice
- 3 tsp sugar
- 1/2 tsp salt (or 1 tsp chicken bouillon)
- 1 tbsp fish sauce
- 1/2 tsp pepper
- 2 tbsp olive oil
- 1 glove of garlic
- some cilantro

Methods:
- Cut bell pepper in small pieces
- slice cucumber in small slices
- Marinate the thinned slice beef with sugar, salt, fish sauce, pepper and 1 tsp of olive oil for about 30 mins
- chop garlic and cilantro (put them separately)
- heat the pan hot, then put in 1 tsp of olive oil.
- when the oil is hot, put the garlic in.
- when the garlic turns to brown, put meat in and stir fry for about 5 mins. Then put bell pepper, cucumber and pickled juice.
- Continue to stir fry for another 5 mins or until bell pepper is soft. Put in the pickled leeks and cilantro. Then turn off the heat.
- Serve this dish with rice.

Red chicken curry



Serving: 10 - 12

Ingredients:

- 2 lbs chicken boneless and skinless chicken breast
- 2 lbs Russel potatoes
- 2 tbsp soy sauce
- 1 tbsp + 3 tsp sugar
- 1/2 tsp salt
- 2 tsp knorr chicken bouillon
- 1 can red curry paste (maeser - small can)
- 1 can creamy coconut milk (14 oz)
- 1 can coconut juice
- 1 cup chicken broth
- some shallot (red onion)
- 2 tbsp olive oil

Methods:
- cut chicken into small pieces
- marinate chicken with 3 tsp sugar + 1/2 tsp salt + 2 stp knorr chicken bouillon + 2 tbsp soy sauce + 2 tsp red curry paste for a few hours or over night.
- thinly chop shallot
- heat the pan hot and put 2 tbsp olive oil + shallot.
- stir the shallot until brown, then put marinated chicken in. Leave there for 2 mins then stir them and cook them for about 20 mins
- peel and cut potatoes to cubes
- throw them in the chicken and stir them for 2 mins
- pour chicken broth, coconut juice, coconut milk and 2 tbsp red curry paste in the stirred fry chicken and cook for another 30 mins (in medium-high heat).
- serve over white rice.

Bo Luc Lac -




Ingredients:
- 2 lbs of beef filet
- 2 tbsp oyster sauce
- 2tbsp soy sauce
- 3 tsp sugar
- 1 tsp salt
- 2 tbsp olive oil
- 1 tbsp pineapple juice (optional)
- garlic
- lettuce
- tomatoes

Methods:

- cut beef in small cube and marinate with oyster sauce, soy sauce, sugar, salt and pineapple juice for a few hours or overnight.
- Heat the pan with high heat. Then put olive oil and crushed garlic.
- When oil and garlic are hot, throw in the beef and quickly stir it.
- It takes 5-10 mins to cook - it depends on how you want your beef to be cooked.
- Decorate the dish with lettuce and tomatoes. Serve with rice

Com Nem Nuong + Dua Gia




This is an easy dish. Just make dua gia. Buy nem nuong at the store, then fry it.
(I'll write the recipe later).
