Bo Xao Cu Kieu - Beef stir-fry with pickle leeks



Ingredients:
- 1 lb of thinned slice beef
- 1 red bell pepper
- 1 big cucumber
- 2 oz pickled leeks
- 2 tbsp pickled juice
- 3 tsp sugar
- 1/2 tsp salt (or 1 tsp chicken bouillon)
- 1 tbsp fish sauce
- 1/2 tsp pepper
- 2 tbsp olive oil
- 1 glove of garlic
- some cilantro

Methods:
- Cut bell pepper in small pieces
- slice cucumber in small slices
- Marinate the thinned slice beef with sugar, salt, fish sauce, pepper and 1 tsp of olive oil for about 30 mins
- chop garlic and cilantro (put them separately)
- heat the pan hot, then put in 1 tsp of olive oil.
- when the oil is hot, put the garlic in.
- when the garlic turns to brown, put meat in and stir fry for about 5 mins. Then put bell pepper, cucumber and pickled juice.
- Continue to stir fry for another 5 mins or until bell pepper is soft. Put in the pickled leeks and cilantro. Then turn off the heat.
- Serve this dish with rice.
